5 Days of Favorite Family Recipes: Beef Tacos with DIY Taco Seasoning

Welcome back to Day 2 in my 5 Day series where I am sharing with you some of our favorite family recipes. Yesterday I shared a delicious Australian Damper Loaf and I hope you snagged that yummy bread recipe. Today we are going spicy with my easy and delicious favorite Taco Recipe!

Tacos are easy right? I admit it. This one is a no-brainer, but it's a favorite just the same! Here's a quick run-thru of our recipe...

Our Favorite Beef Tacos

Extra Virgin Olive Oil
Onion (chopped)
Fresh or Frozen Peppers (Chopped)
1-2 lbs of ground beef
1 can black beans (drained and rinsed)
1 can corn (drained)
2 T. DIY Taco Seasoning (it's the best ever!)
OR 1 pkg taco seasoning
Water

1. Drizzle oil in your cast iron skillet and heat on med-low until just before smoking. Add in your peppers and onions and saute them to release their oils and flavors--you know how much your family will like, which is why I didn't add quantities! But beware, my DIY Taco Seasoning is rather hot--so don't go overboard with your peppers unless you want to breathe fire! LOL!

2. Once the peppers and onions are soft and starting to change color, add in your ground beef. Work it really good so soak up the flavors of the onions and peppers. Brown and drain (if needed).

3. Now stir in the beans and corn; cook for about 5 minutes to heat them up and mix in the flavors.

4. Add in your taco seasoning and needed water. If you are using my seasoning, then add in 3/4 cup of water. Stir very well to mix. Turn heat down to low, cover and let simmer for 5-8 minutes.

Serve hot!

Now--what do I serve my tacos with? Our family is pretty particular when it comes to what goes with our tacos. We are a bit of tortilla snobs. LOL! We either want to eat the ones that I make [Homemade Tortillas Recipe] or the ones that I buy at Costco.

As the package says they are uncooked, so I just take out however many I need and cook them on my flat cast iron griddle lickedy-split. There is always much weeping and gnashing of teeth if I run out of these! LOL! I love them because they are so convenient--but most of all...because they only have FIVE ingredients AND no leavening agents which means we can still eat them while we are observing Unleavened Bread. You can't eat most of the other store-bought flour tortillas. But both these and my homemade tortillas are without leavening (baking soda, baking powder, yeast) for which we are very thankful since we eat tacos...a lot!

In cases where we run out of tacos, our next choice are these great organic chips...
These are organic, gluten-free, stone-ground and light. They aren't like the thick corn tortilla chips you usually find. These are very crunchy and delicious. I buy them at Kroger (the East Coast version of Fred Meyers).

We usually serve tacos with the BEST MEXICAN RICE EVER...seriously. You need to try this recipe from The Tidy Nest. Out of this world!

Everyone in our family loads up their tacos differently, but the result is the same---happy eaters!

I've seen Tortilla Land tortillas at the store, but never bought them - we're tortilla snobs too lol! Are they really as good as homemade?

As good as homemade? No. LOL! But when you are in a hurry and don't have time to make homemade--or just aren't in the mood to do it, they fill the gap much better than any pre-cooked tortilla. And with just 5 ingredients (almost identical to the ones you would use in homemade tortillas) they are much healthier too. They are thicker than the ones you buy precooked AND they cook just right on the griddle with little puff bubbles and everything.
